  • 2 cloves fresh garlic, minced
  • 2 tbsp curry powder
  • 1 package (17.3 oz) puff pastry sheets (2 sheets)

  • 1 bell pepper, diced
  • 2 tbsp low-sodium soy sauce
  • Salt and pepper to taste
  • 1 egg (for egg wash)

Instructions

  1. Preheat oven to 400°F (200°C). Season chicken breasts with salt and pepper. Cook in a skillet over medium heat for about 6-8 minutes per side until fully cooked. Let cool slightly before shredding.
  2. In a bowl, mix shredded chicken with garlic, curry powder, onion, bell pepper, and soy sauce.
  3. Thaw puff pastry sheets according to package instructions and roll out on a floured surface.
  4. Cut circles from the pastry using a cookie cutter or glass. Place a tablespoon of filling in the center of each circle.
  5. Fold over the pastry to form half-moon shapes and seal edges with fingers or a fork.
  6. Place patties on a parchment-lined baking sheet, brush with egg wash, and bake for 20-25 minutes until golden brown.
