Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 2 large eggs (room temperature)
  • ¾ cup whole milk (or almond/oat milk)

  • 2 tablespoons melted butter

Instructions

  1. In a bowl, whisk together flour, sugar, baking powder, and a pinch of salt until combined.
  2. In another bowl, beat the eggs, milk, melted butter, and vanilla extract until smooth.
  3. Gently fold wet ingredients into dry ingredients until just combined; some lumps are okay.
  4. Preheat a non-stick skillet over low heat and lightly grease it. Pour about ¼ cup of batter onto the skillet for each pancake and cover with a lid.
  5. Cook for about 4 minutes until bubbles form on top. Carefully flip and cook uncovered for an additional 2 minutes until golden brown.
