  • 1 whole turkey (1214 pounds), thawed
  • 1/4 cup olive oil
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh rosemary, chopped
  • Juice of 2 lemons
  • 6 cloves garlic, minced
  • 2 tsp paprika

Instructions

  1. Preheat oven to 450°F (232°C).
  2. Place the turkey breast-side down on a cutting board. Use kitchen shears to cut along both sides of the backbone and remove it.
  3. Flip the turkey and press down on the breastbone until it cracks.
  4. Rub olive oil over the skin, then season with salt, pepper, garlic, paprika, and herbs. Squeeze lemon juice over top.
  5. Roast in a lined baking sheet for about 1 hour or until internal temperature reaches 165°F (74°C).
  6. Let rest for 20 minutes before carving.
