Ingredients

  • 3 cups cooked shredded boneless, skinless chicken breasts
  • 1 cup cream of chicken soup
  • 1 cup sour cream
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 1 poblano pepper, chopped
  • 2 cloves fresh garlic, minced
  • 2 cups crushed tortilla chips
  • 2 cups shredded cheese (cheddar or Mexican blend)

Instructions

  1. Preheat the oven to 350°F (175°C) and spray a baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, sauté the chicken until cooked through; shred while warm.
  3. In the same skillet, sauté the onions and peppers until tender.
  4. Combine shredded chicken, sautéed veggies, cream of chicken soup, sour cream, and half of the cheese in a large bowl.
  5. Layer half of the crushed tortilla chips in the baking dish followed by half of the chicken mixture. Repeat layers and top with remaining cheese.
  6. Bake for about 30 minutes until golden brown and bubbly.
