Ingredients

  • 1 lb small potatoes (baby or new)
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp brown sugar
  • 3 cloves garlic, minced
  • 1 tbsp sesame oil (plus extra for drizzling)
  • 1 cup water
  • 2 green onions, chopped

Instructions

  1. Wash the potatoes thoroughly and leave the skins on for added flavor.
  2. Heat a pan over medium heat and add sesame oil. Sauté minced garlic until fragrant.
  3. Add the potatoes to the pan, stirring to coat with garlic until slightly golden.
  4. In a bowl, mix soy sauce, brown sugar, and water; pour over the potatoes.
  5. Reduce heat, cover, and simmer for 20-25 minutes until potatoes are fork-tender.
  6. Remove from heat, drizzle with additional sesame oil, and garnish with green onions before serving.
