  • 3 boneless, skinless chicken breasts (450g)
  • 2 tablespoons olive oil
  • 3 cloves fresh garlic, minced
  • 1 medium zucchini, diced (200g)
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup frozen peas (150g)
  • 1 cup orzo pasta (200g)
  • 3 tablespoons low-sodium soy sauce
  • Juice of 1 lemon

Instructions

  1. Prep ingredients by washing and chopping vegetables into bite-sized pieces.
  2. In a large skillet over medium-high heat, heat olive oil. Add chicken breasts and cook until golden brown on both sides (6-8 minutes). Remove from pan and slice.
  3. Cook orzo in salted boiling water according to package instructions (8-10 minutes). Drain.
  4. In the same skillet, add more olive oil if needed and sauté minced garlic until fragrant (about 1 minute). Add zucchini and bell peppers; cook until tender yet crisp.
  5. Return sliced chicken and cooked orzo to the skillet. Stir in soy sauce and lemon juice; mix until well combined.
  6. Toss in frozen peas just before serving. Plate the stir fry and drizzle with additional sauce if desired.
