- 3 boneless, skinless chicken breasts (450g)
- 2 tablespoons olive oil
- 3 cloves fresh garlic, minced
- 1 medium zucchini, diced (200g)
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 cup frozen peas (150g)
- 1 cup orzo pasta (200g)
- 3 tablespoons low-sodium soy sauce
- Juice of 1 lemon
Instructions
- Prep ingredients by washing and chopping vegetables into bite-sized pieces.
- In a large skillet over medium-high heat, heat olive oil. Add chicken breasts and cook until golden brown on both sides (6-8 minutes). Remove from pan and slice.
- Cook orzo in salted boiling water according to package instructions (8-10 minutes). Drain.
- In the same skillet, add more olive oil if needed and sauté minced garlic until fragrant (about 1 minute). Add zucchini and bell peppers; cook until tender yet crisp.
- Return sliced chicken and cooked orzo to the skillet. Stir in soy sauce and lemon juice; mix until well combined.
- Toss in frozen peas just before serving. Plate the stir fry and drizzle with additional sauce if desired.
