  • 1 cup granulated sugar

  • 8 oz cream cheese (softened)
  • 1 tsp vanilla extract
  • 1/2 cup unsalted butter (melted)

Instructions

  2. In a bowl, whisk together flour, baking powder, sugar, and salt.
  3. In another bowl, beat eggs until frothy; then mix in milk, melted butter, lemon zest, lemon juice, and vanilla extract.
  4. Combine wet and dry ingredients gently until just mixed.
  5. In a small bowl, mix cream cheese with sugar and lemon zest for the filling.
  6. Fill muffin liners halfway with batter, add a dollop of cream cheese mixture, then top with more batter.
  7. Bake for 18-20 minutes until golden brown and a toothpick comes out clean.
  8. Let cool for five minutes before transferring to wire racks.
