- 1/2 cup unsalted butter, cold and cubed
- 2 large eggs
- 1/2 cup fresh lemon juice (about 2–3 lemons)
- Zest of 1 lemon
- 1 tsp baking powder
- Powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
- In a bowl, mix flour, granulated sugar, and baking powder. Cut in the cold butter until crumbly.
- Press the mixture into the prepared baking dish and bake for 15 minutes until lightly golden.
- Whisk together eggs and granulated sugar in another bowl; then add lemon juice and zest until smooth.
- Pour the lemon mixture over the pre-baked crust evenly.
- Bake again for 20-25 minutes or until just set but still jiggly in the center.
- Allow cooling completely before dusting with powdered sugar and cutting into squares.
