Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine flour and 1/4 cup sugar. Cut in chilled butter until the mixture resembles coarse crumbs. Gradually add ice water until dough forms; chill for 30 minutes.
  3. Roll out the dough on a floured surface into a circle about 12 inches wide and transfer it to a 9-inch tart pan. Trim excess edges.
  4. Line the crust with parchment paper and fill with pie weights or beans. Bake for 15 minutes, remove weights, and bake for another 10 minutes until golden brown; let cool.
  5. For the lemon filling, whisk together lemon juice, zest, eggs, 3/4 cup sugar, and cornstarch in a saucepan over medium heat until thickened (5-7 minutes).
  6. Pour the filling into the cooled crust and allow it to cool at room temperature before refrigerating for at least two hours or until set.
  7. Dust with powdered sugar before serving; enjoy chilled or at room temperature.
