  • 6 oz fresh feta cheese, crumbled
  • 2 large fresh lemons, zested and juiced
  • 3 tbsp extra virgin olive oil
  • 3 garlic cloves, minced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup fresh basil leaves, chopped
  • Salt and pepper to taste

Instructions

  1. 1. Boil pasta: In a large pot of salted water, cook pasta according to package instructions until al dente. Drain and set aside.
  2. 2. Sauté garlic and tomatoes: In a skillet over medium heat, combine olive oil and minced garlic. Sauté for 30 seconds, then add halved cherry tomatoes until softened.
  3. 3. Add feta and lemon: Crumble feta into the skillet and squeeze fresh lemon juice over the mixture. Stir gently for about two minutes until warmed through.
