Description

Lemon Herb Roasted Chicken is a flavorful, easy-to-make dish that combines juicy chicken with zesty lemon and aromatic herbs, perfect for family dinners or special occasions.


Ingredients

  • Whole chicken (4-5 lbs)
  • Fresh lemons
  • Fresh rosemary, thyme, and parsley
  • Garlic cloves
  • Extra virgin olive oil
  • Salt and pepper
  • Carrots and potatoes (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the chicken under cold water and pat dry with paper towels.
  3. In a bowl, mix olive oil, minced garlic, salt, pepper, lemon juice from two lemons, and chopped herbs. Rub this mixture generously over the chicken.
  4. If using, chop carrots and potatoes; toss in olive oil with salt and pepper and arrange around the chicken in the roasting pan.
  5. Roast for about 1 hour or until the internal temperature reaches 165°F (74°C), basting halfway through.
  6. Let the chicken rest for 10-15 minutes before carving.
