Ingredients
- Whole chicken (4-5 lbs)
- Fresh lemons
- Fresh rosemary, thyme, and parsley
- Garlic cloves
- Extra virgin olive oil

- Carrots and potatoes (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Rinse the chicken under cold water and pat dry with paper towels.
- In a bowl, mix olive oil, minced garlic, salt, pepper, lemon juice from two lemons, and chopped herbs. Rub this mixture generously over the chicken.
- If using, chop carrots and potatoes; toss in olive oil with salt and pepper and arrange around the chicken in the roasting pan.
- Roast for about 1 hour or until the internal temperature reaches 165°F (74°C), basting halfway through.
- Let the chicken rest for 10-15 minutes before carving.
