Ingredients

  • 1 cup fresh lemon juice (about 46 lemons)
  • 1 cup granulated sugar
  • 1 cup filtered water
  • Optional: Fresh mint leaves for garnish

Instructions

  1. Juice the lemons until you have 1 cup of fresh lemon juice.
  2. In a saucepan, combine 1 cup of sugar and 1 cup of water over medium heat, stirring until the sugar dissolves and the mixture simmers. Let it cool for about 10 minutes.
  3. Mix the cooled syrup with the lemon juice in a bowl. Add mint leaves if desired.
  4. Pour into an ice cream maker and churn according to instructions until smooth. If using a shallow dish, freeze and stir every 30 minutes for about 3 hours until fluffy.
  5. Serve in bowls or glasses, garnished with mint if desired.
