- 1 cup granulated sugar
- 1 cup filtered water

Instructions
- Juice the lemons until you have 1 cup of fresh lemon juice.
- In a saucepan, combine 1 cup of sugar and 1 cup of water over medium heat, stirring until the sugar dissolves and the mixture simmers. Let it cool for about 10 minutes.
- Mix the cooled syrup with the lemon juice in a bowl. Add mint leaves if desired.
- Pour into an ice cream maker and churn according to instructions until smooth. If using a shallow dish, freeze and stir every 30 minutes for about 3 hours until fluffy.
- Serve in bowls or glasses, garnished with mint if desired.
