Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup powdered sugar (for dusting)
  • 1 cup ground almonds
  • 1/2 cup raspberry jam (or your favorite jam)
  • 1 tsp vanilla extract
  • 1 large egg yolk

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, whisk together flour and ground almonds; set aside.
  3. Cream softened butter and granulated sugar in another bowl until light and fluffy (about 3-4 minutes).
  4. Mix in egg yolk and vanilla extract until fully combined.
  5. Gradually add the dry mixture into the wet mixture until just combined; do not overmix.
  6. Roll out half of the dough to about 1/4 inch thick on a floured surface and cut out shapes, ensuring half have an inner shape cut out for the jam filling.
  7. Place cookies on prepared baking sheets and bake for 10-12 minutes or until lightly golden around the edges.
  8. Cool completely before spreading raspberry jam on each base cookie and topping with the cut-out cookie shapes. Dust with powdered sugar before serving.
