Description

Ingredients

  • Shrimp (fresh or frozen, peeled and deveined)
  • Smoked sausage (preferably Andouille)
  • Onion
  • Bell peppers (green and red)
  • Celery
  • Garlic
  • Canned diced tomatoes
  • Chicken broth
  • Cajun seasoning
  • Bay leaves
  • Green onions (for garnish)
  • Rice (for serving)

Instructions

  1. In a large pot over medium heat, melt ½ cup vegetable oil. Whisk in ½ cup flour to create a roux, stirring continuously until golden brown.
  2. Add chopped onion, bell peppers, and celery to the roux; cook until softened.
  3. Stir in minced garlic and Cajun seasoning; cook for 1 minute until fragrant.
  4. Gradually add 6 cups of chicken broth and 1 can of diced tomatoes; bring to a boil.
  5. Reduce heat, add sliced smoked sausage; simmer for 20 minutes. Then add shrimp and cook until pink and plump.
  6. Remove bay leaves before serving over rice, garnished with sliced green onions.
