Ingredients

Instructions
- In a large pot over medium heat, melt ½ cup vegetable oil. Whisk in ½ cup flour to create a roux, stirring continuously until golden brown.
- Add chopped onion, bell peppers, and celery to the roux; cook until softened.
- Stir in minced garlic and Cajun seasoning; cook for 1 minute until fragrant.
- Gradually add 6 cups of chicken broth and 1 can of diced tomatoes; bring to a boil.
- Reduce heat, add sliced smoked sausage; simmer for 20 minutes. Then add shrimp and cook until pink and plump.
- Remove bay leaves before serving over rice, garnished with sliced green onions.
