- 2 tbsp fresh mandarin orange juice
- 1 cup white chocolate chips
Instructions
- Preheat oven to 300°F (150°C) and line baking sheets with parchment paper.
- Sift together almond flour and powdered sugar twice into a bowl.
- In another bowl, whip egg whites until frothy, then gradually add granulated sugar until stiff peaks form.
- Gently fold in mandarin zest, then gradually incorporate the dry ingredients until combined.
- Pipe small circles onto the prepared baking sheets and tap to release air bubbles.
- Bake for 15-20 minutes until shells firm up; let cool completely on the sheet.
- For the filling, heat heavy cream until simmering, pour over white chocolate chips, stir until smooth, then mix in mandarin juice.
- Pipe ganache onto half the macaron shells and sandwich with the remaining shells.
