Description

  • 1 cup almond flour (finely ground)
  • 1 ½ cups powdered sugar
  • 2 large egg whites (room temperature)
  • ¼ cup granulated sugar
  • Zest of 1 mandarin orange
  • ½ cup unsalted butter (softened)
  • ¼ cup heavy cream
  • 2 tbsp fresh mandarin orange juice
  • 1 cup white chocolate chips

Instructions

  1. Preheat oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. Sift together almond flour and powdered sugar twice into a bowl.
  3. In another bowl, whip egg whites until frothy, then gradually add granulated sugar until stiff peaks form.
  4. Gently fold in mandarin zest, then gradually incorporate the dry ingredients until combined.
  5. Pipe small circles onto the prepared baking sheets and tap to release air bubbles.
  6. Bake for 15-20 minutes until shells firm up; let cool completely on the sheet.
  7. For the filling, heat heavy cream until simmering, pour over white chocolate chips, stir until smooth, then mix in mandarin juice.
  8. Pipe ganache onto half the macaron shells and sandwich with the remaining shells.
