  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 4 large eggs
  • 1 cup full-fat coconut milk
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12 oz) evaporated milk
  • 2 ripe mangoes, diced for topping
  • 1 cup heavy cream (for whipped topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish.
  2. Whisk together flour, sugar, baking powder, and salt in a bowl.
  3. In another bowl, beat eggs until frothy. Mix in coconut milk and combine with dry ingredients until smooth.
  4. Pour batter into the prepared dish and bake for 25-30 minutes or until golden brown.
  5. In a separate bowl, whisk together sweetened condensed milk, evaporated milk, and remaining coconut milk.
  6. Once baked, let the cake cool slightly and poke holes all over its surface with a fork.
  7. Pour the milk mixture evenly over the warm cake to soak.
  8. Cover and refrigerate for at least 4 hours or overnight.
  9. Whip heavy cream until soft peaks form and spread over the chilled cake. Top with diced mangoes.
