Ingredients

  • 2 cups mixed greens (spinach, arugula)
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, sliced
  • 1 cup bell peppers, diced
  • ½ cup cooked chicken or chickpeas
  • ¼ cup feta cheese or parmesan, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by washing and drying the greens and chopping the veggies into bite-sized pieces.
