Ingredients

  • 1 cup quinoa
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 small red onion, thinly sliced
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/2 cup crumbled feta cheese
  • Juice of 1 lemon (about 2 tablespoons)
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water. Combine with 2 cups of water in a saucepan. Bring to a boil, then reduce heat to low and simmer for about 15 minutes until all water is absorbed. Fluff with a fork.
  2. While quinoa cooks, chop the cucumber, halve the cherry tomatoes, and slice the red onion.
  3. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
  4. In a large bowl, combine cooked quinoa, diced cucumber, cherry tomatoes, red onion, olives, and feta cheese.
  5. Drizzle dressing over the mixture and toss gently to combine.
  6. Serve immediately or store in an airtight container in the fridge for up to three days.
