  • 1 lb firm white fish (tilapia or snapper), cubed
  • 1/2 cup freshly squeezed lime juice (about 45 limes)
  • 1 medium red onion, finely chopped
  • 1 cup ripe tomatoes, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced (adjust for heat)
  • 1 tsp sea salt (to taste)
  • 1 avocado, diced

Instructions

  1. Rinse the fish under cold water and pat dry. Cube into half-inch pieces.
  2. Marinate the fish in lime juice for 15-20 minutes until it turns opaque.
  3. While the fish marinates, chop the red onion, tomatoes, jalapeños, and cilantro. Combine in a large mixing bowl with salt and additional lime juice.
  4. Drain some lime juice from the fish before adding it to the vegetable mix. Fold gently to combine.
  5. Taste and adjust seasoning with more salt or lime juice if needed.
  6. Just before serving, fold in diced avocado for creaminess.
  7. Serve chilled with tortilla chips or enjoy on its own.
