  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 8 oz penne or rotini pasta
  • 1 cup diced bell peppers (mixed red and green)
  • 2 tbsp taco seasoning
  • 1 cup sour cream or Greek yogurt
  • 2 cups shredded cheddar or Monterey Jack cheese (divided)
  • 1 can (14.5 oz) diced tomatoes (fire-roasted recommended)
  • 1 cup low-sodium chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. Season the chicken breasts with salt and pepper. In a skillet over medium heat, cook the chicken for about 5-7 minutes per side until golden brown. Remove from the pan and let rest.
  3. In the same skillet, sauté minced garlic and diced bell peppers until fragrant.
  4. Chop the rested chicken into bite-sized pieces. In a large bowl, combine the chicken, cooked pasta, sautéed veggies, diced tomatoes, taco seasoning, sour cream, and half of the shredded cheese.
  5. Pour the mixture into the prepared baking dish and top with remaining cheese.
  6. Bake for 25-30 minutes until bubbly and golden.
