- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 2 cloves fresh garlic, minced
- 8 oz penne or rotini pasta
- 1 cup diced bell peppers (mixed red and green)
- 2 tbsp taco seasoning
- 1 cup sour cream or Greek yogurt
- 2 cups shredded cheddar or Monterey Jack cheese (divided)
- 1 can (14.5 oz) diced tomatoes (fire-roasted recommended)
- 1 cup low-sodium chicken broth
Instructions
- Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
- Season the chicken breasts with salt and pepper. In a skillet over medium heat, cook the chicken for about 5-7 minutes per side until golden brown. Remove from the pan and let rest.
- In the same skillet, sauté minced garlic and diced bell peppers until fragrant.
- Chop the rested chicken into bite-sized pieces. In a large bowl, combine the chicken, cooked pasta, sautéed veggies, diced tomatoes, taco seasoning, sour cream, and half of the shredded cheese.
- Pour the mixture into the prepared baking dish and top with remaining cheese.
