  • 1 can (15 oz) black beans (rinsed and drained)
  • 1 cup bell peppers (diced; mix of red, yellow, green)
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 1 cup tomato sauce (low-sodium)
  • 2 tsp chili powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a baking dish.
  2. In a large skillet over medium heat, add olive oil. Sauté onion and bell peppers until soft, about 5 minutes.
  3. Stir in minced garlic, quinoa, black beans, tomato sauce, chili powder, salt, and pepper. Mix well.
  4. Transfer the mixture to the prepared baking dish and smooth out evenly. Cover with aluminum foil.
  5. Bake for 30 minutes. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 10 minutes until bubbly and golden.
  6. Let cool slightly before serving with avocado slices or fresh cilantro.
