- 1 cup bell peppers (diced; mix of red, yellow, green)
- 1 medium onion (diced)
- 2 cloves garlic (minced)
- 1 cup tomato sauce (low-sodium)
- 2 tsp chili powder
- 1 tsp salt
- ½ tsp black pepper
- 1 cup shredded cheese (cheddar or Mexican blend)
- 2 tbsp olive oil
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a baking dish.
- In a large skillet over medium heat, add olive oil. Sauté onion and bell peppers until soft, about 5 minutes.
- Stir in minced garlic, quinoa, black beans, tomato sauce, chili powder, salt, and pepper. Mix well.
- Transfer the mixture to the prepared baking dish and smooth out evenly. Cover with aluminum foil.
- Bake for 30 minutes. Remove foil, sprinkle cheese on top, and bake uncovered for an additional 10 minutes until bubbly and golden.
