  • 1 lb lean minced beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 large Russet potatoes, peeled and chopped
  • 2 cups beef broth
  • 1 cup frozen peas
  • 2 tbsp butter
  • Salt and pepper to taste

Instructions

  1. Heat a tablespoon of oil in a large skillet over medium heat. Sauté the diced onions and minced garlic until golden brown (about 5 minutes).
  2. Add the minced beef and cook until browned, breaking up clumps as necessary.
  3. Pour in the beef broth, add salt and pepper to taste, and let simmer for 10 minutes.
  4. Boil chopped potatoes in salted water until fork-tender (about 15 minutes). Drain and mash with butter, salt, and a splash of milk until smooth.
  5. Fold frozen peas into the beef mixture before serving.
  6. Serve generous portions of the beef over the mashed potatoes.
