  • 1 cup graham cracker crumbs
  • 4 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup creamy peanut butter
  • 3/4 cup granulated sugar
  • 3 large eggs, room temperature
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup mini peanut butter cups, chopped

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs and melted butter; press into mini muffin tins lined with paper liners.
  3. Bake crusts for about 8 minutes until golden; set aside.
  4. Beat cream cheese until smooth; mix in peanut butter and sugar until fluffy. Add eggs one at a time.
  5. Fold in chocolate chips and half of the chopped mini peanut butter cups.
  6. Fill each crust three-quarters full and bake for 15-20 minutes until slightly jiggly in the center.
  7. Cool completely before refrigerating for at least two hours.
