- 16 oz cream cheese, softened
- 1 cup creamy peanut butter
- 3/4 cup granulated sugar
- 3 large eggs, room temperature
- 1/2 cup semi-sweet chocolate chips
- 1/2 cup mini peanut butter cups, chopped
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, combine graham cracker crumbs and melted butter; press into mini muffin tins lined with paper liners.
- Bake crusts for about 8 minutes until golden; set aside.
- Beat cream cheese until smooth; mix in peanut butter and sugar until fluffy. Add eggs one at a time.
- Fold in chocolate chips and half of the chopped mini peanut butter cups.
- Fill each crust three-quarters full and bake for 15-20 minutes until slightly jiggly in the center.
- Cool completely before refrigerating for at least two hours.
