  • 1 cup heavy cream
  • 1 cup fresh spinach, sautéed
  • 1 cup button mushrooms, sliced
  • 4 strips crispy bacon, chopped
  • 1 cup shredded cheddar cheese
  • 1 package (9-inch) pie crusts (store-bought or homemade)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a muffin tin with nonstick spray.
  2. Sauté spinach until wilted and mushrooms until tender; season with salt and pepper.
  3. Cook bacon until crispy and drain on paper towels.
  4. In a mixing bowl, whisk together eggs and heavy cream. Stir in cheese, sautéed vegetables, and bacon.
  5. Roll out pie crusts, cut into circles, and press into muffin tin cups. Fill each about three-quarters full with the egg mixture.
