  • 4 medium Russet potatoes
  • 1 lb lean ground beef or lamb
  • 1 medium onion, finely chopped
  • 1 cup diced carrots
  • ½ cup frozen peas (no need to thaw)
  • 1 cup low-sodium beef broth
  • 4 tbsp butter
  • ½ cup milk
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in salted water until fork-tender (15-20 minutes), then drain.
  2. Mash the drained potatoes with butter and milk until smooth; season with salt and pepper.
  3. In a skillet, sauté onions over medium heat until translucent (about 5 minutes). Add carrots and cook until tender (about 5 more minutes).
  4. Stir in ground meat; cook until browned (about 7 minutes). Add beef broth and simmer until thickened (approximately 5 minutes).
  5. Preheat oven to 375°F (190°C). Press mashed potatoes into muffin tins, layer with meat mixture, and top with additional mashed potatoes.
  6. Bake for 15-20 minutes or until golden brown. Allow to cool slightly before serving.
