Description

Ingredients

  • 1 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup unsalted butter (melted)
  • 1 tsp pure mint extract
  • 1/2 cup semi-sweet chocolate chips
  • Crushed peppermint candies for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan or line it with parchment paper.
  2. In a medium bowl, melt the butter. Stir in sugar and cocoa powder until well combined.
  3. Add eggs one at a time, mixing continuously. Then mix in the mint extract.
  4. Gently fold in the flour until just combined; avoid overmixing.
  5. Fold in the chocolate chips and pour the batter into the prepared pan.
  6. Bake for 25-30 minutes or until a toothpick inserted comes out with moist crumbs.
