  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/3 cup unsweetened cocoa powder
  • 2 large eggs
  • 1/4 cup white or yellow miso paste
  • 1 cup all-purpose flour
  • Optional: 1/2 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper.
  2. Melt the butter in a medium saucepan over low heat. Remove from heat and stir in both sugars until combined.
  3. Allow the mixture to cool slightly, then whisk in the eggs one at a time, followed by the miso paste.
  4. In a separate bowl, sift together the cocoa powder and flour. Gradually fold this dry mix into the wet ingredients until just combined.
  5. Gently fold in chocolate chips if using.
  6. Pour the batter into the prepared pan and bake for 25-30 minutes, until edges are firm but center is still soft.
  7. Let cool before slicing into squares.
