- 4 tbsp unsalted butter
- 3 tbsp white or yellow miso paste
- 1 ripe avocado, sliced
- 4 cups mixed greens (baby spinach and arugula)
- 1/2 cup chopped walnuts or pecans, toasted
- 2 tbsp freshly squeezed lemon juice
- 1 tbsp honey or maple syrup
Instructions
- Preheat oven to 400°F (200°C). Wrap each beet in foil and roast on a baking sheet for 45-60 minutes until tender.
- In a saucepan over low heat, melt butter and whisk in miso paste until well combined. Add lemon juice and honey/maple syrup.
- In a large bowl, combine mixed greens. Toss in sliced avocado just before serving.
- Once cooled, peel the beets and slice into wedges or rounds.
- Drizzle the dressing over greens and beets; toss gently to coat evenly.
