  • 2 tbsp white or yellow miso paste
  • 2 tbsp unsalted butter
  • 3 cloves garlic, minced
  • 1 cup low-sodium vegetable broth
  • 1 tbsp fresh lemon juice

Instructions

  1. Rinse the collard greens under cold water to remove grit. Remove and discard tough stems.
  2. In a large skillet over medium heat, melt 1 tablespoon of butter. Add minced garlic and sauté until fragrant (about 1 minute).
  3. Add collard greens to the skillet and sauté until they start wilting (approximately 5 minutes).
  4. In a bowl, mix miso paste with a splash of vegetable broth until smooth, then pour it over the collards and stir.
  5. Gradually add more vegetable broth as needed, cooking until the greens are tender but not mushy (about 10 minutes total). Finish with remaining butter and lemon juice.
