  • 1 whole chicken (45 lbs)
  • 1/2 cup unsalted butter
  • 3 tbsp white or red miso paste
  • 4 garlic cloves, crushed
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh lemon juice
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat the oven to 425°F (220°C) and grease a roasting pan with olive oil.
  2. Melt the butter in a saucepan over low heat. Stir in miso paste until combined.
  3. Mix in crushed garlic, chopped rosemary, and lemon juice.
  4. Place the chicken in the roasting pan; loosen skin on the breast and fill with half of the butter-miso mixture, rubbing remaining mix on the outside.
  5. Season generously with salt and pepper.
  6. Roast for about 1 hour and 15 minutes, basting halfway through, until internal temperature reaches 165°F (75°C).
