Description

Indulge in the cozy flavors of fall with Miso Butter Stuffed Squash. This stunning dish combines the natural sweetness of acorn or butternut squash with rich, umami-packed miso butter. Perfectly roasted and topped with fresh green onions and toasted sesame seeds, it’s an impressive centerpiece for any gathering or a comforting weeknight dinner.


Ingredients

  • 2 medium acorn or butternut squash
  • 4 tbsp white or yellow miso paste
  • 4 tbsp unsalted butter, softened
  • 2 garlic cloves, minced
  • 1 tsp soy sauce (low-sodium)
  • 2 green onions, chopped
  • 1 tbsp toasted sesame seeds
  • Olive oil, salt, and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking tray with parchment paper.
  2. Halve the squash lengthwise and scoop out seeds. Drizzle cut sides with olive oil; season with salt and pepper. Place cut side down on the prepared tray.
  3. In a small bowl, mix miso paste, softened butter, minced garlic, and soy sauce until smooth.
  4. Flip squash halves over and fill each cavity generously with the miso butter mixture.
  5. Bake for 30-35 minutes until tender and caramelized.
  6. Once done, sprinkle chopped green onions and toasted sesame seeds on top before serving.
