- 2 medium acorn or butternut squash
- 4 tbsp white or yellow miso paste
- 4 tbsp unsalted butter, softened
- 2 garlic cloves, minced
- 1 tsp soy sauce (low-sodium)
- 2 green onions, chopped
- 1 tbsp toasted sesame seeds
- Olive oil, salt, and pepper to taste
Instructions
- Preheat oven to 400°F (200°C) and line a baking tray with parchment paper.
- Halve the squash lengthwise and scoop out seeds. Drizzle cut sides with olive oil; season with salt and pepper. Place cut side down on the prepared tray.
- In a small bowl, mix miso paste, softened butter, minced garlic, and soy sauce until smooth.
- Flip squash halves over and fill each cavity generously with the miso butter mixture.
- Bake for 30-35 minutes until tender and caramelized.
- Once done, sprinkle chopped green onions and toasted sesame seeds on top before serving.
