- 3–4 lbs chuck roast
- 1/4 cup unsalted butter (½ stick)
- 6–8 pepperoncini peppers (whole or sliced)
- 1 packet Au Jus gravy mix
- 1 packet ranch dressing mix
- 1 cup low-sodium beef broth
- 1 large onion (chopped)
- 4 cloves garlic (minced)
Instructions
- Prepare your ingredients by chopping the onions and mincing the garlic.
- In a large skillet over medium-high heat, melt the butter. Sear the chuck roast on each side until browned (about 4-5 minutes per side).
- Sprinkle both sides of the roast with Au Jus gravy mix and ranch dressing mix, then surround it with chopped onions and minced garlic.
- Place pepperoncini peppers on top of the roast. If desired, add some brine for extra flavor.
- Pour beef broth around the roast without washing off the seasoning.
- Cover and cook in a slow cooker on low for 8 hours or high for 4-5 hours until the meat shreds easily.
