  • 1/2 cup brown sugar
  • 3 large eggs
  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp instant coffee granules
  • 1 tsp peppermint extract
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup crushed peppermint candies

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. Melt the butter in a saucepan over low heat; allow it to cool slightly.
  3. In a mixing bowl, whisk together melted butter, granulated sugar, brown sugar, and eggs until smooth. Stir in peppermint extract and instant coffee.
  4. In another bowl, sift flour, cocoa powder, and salt together. Gradually fold this dry mixture into the wet ingredients until just combined.
  5. Gently fold in chocolate chips and pour the batter into the prepared pan. Top with crushed peppermint candies.
  6. Bake for 25-30 minutes or until a toothpick comes out with moist crumbs. Cool completely before slicing.
