  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 4 large eggs
  • 2 tsp vanilla extract
  • ¾ cup cocoa powder
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 2 cups rolled oats (old-fashioned)
  • 1 cup semi-sweet chocolate chips
  • 1 cup M&Ms or nuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan or line with parchment paper.
  2. In a large bowl, melt the unsalted butter. Stir in granulated sugar and brown sugar until smooth.
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. In another bowl, whisk together cocoa powder, flour, baking powder, and a pinch of salt. Gradually fold into the wet mixture until just combined.
  5. Fold in rolled oats and chocolate chips (and optional M&Ms or nuts) until evenly distributed.
  6. Pour batter into prepared pan and spread evenly. Bake for 25-30 minutes until edges are set but center is soft.
  7. Allow to cool before cutting into squares.
