  • 2 cups elbow macaroni
  • 1 lb lean ground beef or turkey
  • 1 can (15 oz) chili beans
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 2 cups shredded cheddar cheese
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 tsp chili powder
  • 1 tsp cumin
  • 4 cups water or broth

Instructions

  1. In a large pot over medium heat, brown the ground beef or turkey for about 5–7 minutes. Drain excess fat if necessary.
  2. Add chopped onion and minced garlic; cook until fragrant (about 3 minutes).
  3. Stir in diced tomatoes (with juices), chili beans, elbow macaroni, water or broth, chili powder, and cumin. Bring to a boil while stirring occasionally.
  4. Reduce heat to low, cover the pot, and let simmer for 10–12 minutes until pasta is al dente.
  5. Remove from heat and stir in shredded cheese until melted and creamy.
  6. Serve topped with green onions or alongside tortilla chips.
