  • ¾ cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 ½ tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 large eggs (room temperature)
  • 1 cup unsalted butter (softened)
  • 1 tsp vanilla extract
  • 1 cup heavy cream (cold)
  • 2 cups powdered sugar
  • 12 Oreo cookies (crumbled, plus extra for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans and line the bottoms with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt until well combined.
  3. In another bowl, cream softened butter until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture until just combined; do not overmix.
  5. Divide the batter evenly between the prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  6. Allow cakes to cool in pans for 10 minutes before transferring them to wire racks to cool completely.
  7. Whip heavy cream with powdered sugar until stiff peaks form. Frost one layer of the cooled cake with whipped cream and sprinkle crumbled Oreos on top before placing the second layer on top and frosting the entire cake.
