  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the orzo pasta in a large pot of salted boiling water according to package instructions (about 8-10 minutes) until al dente. Drain and rinse under cold water.
  2. While the orzo cooks, prepare your vegetables: chop cherry tomatoes, dice cucumber, and thinly slice red onion.
  3. In a large mixing bowl, combine the cooked orzo with the chopped vegetables and gently fold together.
  4. Add crumbled feta cheese, chopped basil and parsley to the bowl. Drizzle with olive oil and lemon juice; season with salt and pepper.
  5. Toss gently until all ingredients are well combined. Adjust seasoning if necessary.
  6. Serve immediately or let it chill in the fridge for an hour for enhanced flavors.
