- 1 cup orzo pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- 3 tbsp extra virgin olive oil
- 2 tbsp freshly squeezed lemon juice
- Salt and pepper to taste
Instructions
- Cook the orzo pasta in a large pot of salted boiling water according to package instructions (about 8-10 minutes) until al dente. Drain and rinse under cold water.
- While the orzo cooks, prepare your vegetables: chop cherry tomatoes, dice cucumber, and thinly slice red onion.
- In a large mixing bowl, combine the cooked orzo with the chopped vegetables and gently fold together.
- Add crumbled feta cheese, chopped basil and parsley to the bowl. Drizzle with olive oil and lemon juice; season with salt and pepper.
- Toss gently until all ingredients are well combined. Adjust seasoning if necessary.
- Serve immediately or let it chill in the fridge for an hour for enhanced flavors.
