  • 8 oz pasta (spaghetti or penne)
  • 2 cups ripe fresh tomatoes, chopped
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1/4 cup fresh basil leaves, torn
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in a large pot of salted boiling water according to package directions until al dente (about 8-10 minutes). Drain and set aside.
  2. In a large skillet over medium heat, add olive oil and sauté minced garlic for 1-2 minutes until fragrant.
  3. Stir in chopped tomatoes and season with salt and pepper. Cook for 5-7 minutes until softened.
  4. Lower the heat, slowly pour in heavy cream while stirring gently, and simmer for 3-4 minutes until slightly thickened.
  5. Add cooked pasta to the skillet, tossing to coat evenly with the sauce. Adjust seasoning if necessary.
