  • 1 lb beef sirloin (sliced into strips)
  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 1 medium onion (sliced)
  • 3 cloves garlic (minced)
  • 2 tbsp low-sodium soy sauce (for marinating)
  • 2 tbsp low-sodium soy sauce (for sauce)
  • 1 cup beef broth
  • 2 tbsp cornstarch
  • 1 tbsp vegetable oil (for cooking)

Instructions

  1. Slice beef sirloin against the grain into thin strips. Chop bell peppers and onion into bite-sized pieces.
  2. Marinate beef in 2 tablespoons of soy sauce for 15 minutes.
  3. Heat oil in a skillet over medium-high heat. Sear marinated beef until browned, about 3-4 minutes. Remove and set aside.
  4. In the same skillet, sauté onions and bell peppers until softened, about 5 minutes.
  5. Whisk together remaining soy sauce, beef broth, minced garlic, cornstarch, and black pepper. Pour over veggies and cook until thickened, about 2 minutes.
  6. Return beef to the skillet; mix to coat evenly in sauce. Serve immediately over rice or noodles.
