- 1 red bell pepper (sliced)
- 1 yellow bell pepper (sliced)
- 1 green bell pepper (sliced)
- 1 medium onion (sliced)
- 3 cloves garlic (minced)
- 2 tbsp low-sodium soy sauce (for marinating)
- 2 tbsp low-sodium soy sauce (for sauce)
- 1 cup beef broth
- 2 tbsp cornstarch
- 1 tbsp vegetable oil (for cooking)
Instructions
- Slice beef sirloin against the grain into thin strips. Chop bell peppers and onion into bite-sized pieces.
- Marinate beef in 2 tablespoons of soy sauce for 15 minutes.
- Heat oil in a skillet over medium-high heat. Sear marinated beef until browned, about 3-4 minutes. Remove and set aside.
- In the same skillet, sauté onions and bell peppers until softened, about 5 minutes.
- Whisk together remaining soy sauce, beef broth, minced garlic, cornstarch, and black pepper. Pour over veggies and cook until thickened, about 2 minutes.
