- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup shelled roasted pistachios
- 1 cup plain full-fat yogurt
- 4 cloves fresh garlic, minced
- Juice of 1 lemon
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Cut chicken breasts into bite-sized pieces. In a mixing bowl, combine yogurt, minced garlic, lemon juice, olive oil, cumin, paprika, salt, and pepper. Add chicken and mix well to coat.
- Cover and marinate in the refrigerator for at least 1 hour (preferably overnight).
- Finely chop pistachios and spread on a plate.
- Preheat the grill to medium-high heat. Thread marinated chicken onto skewers.
- Grill kabobs for 10-12 minutes, turning occasionally until golden brown and cooked through.
- Serve warm with a squeeze of fresh lemon juice.
