  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup shelled roasted pistachios
  • 1 cup plain full-fat yogurt
  • 4 cloves fresh garlic, minced
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Cut chicken breasts into bite-sized pieces. In a mixing bowl, combine yogurt, minced garlic, lemon juice, olive oil, cumin, paprika, salt, and pepper. Add chicken and mix well to coat.
  2. Cover and marinate in the refrigerator for at least 1 hour (preferably overnight).
  3. Finely chop pistachios and spread on a plate.
  4. Preheat the grill to medium-high heat. Thread marinated chicken onto skewers.
  5. Grill kabobs for 10-12 minutes, turning occasionally until golden brown and cooked through.
  6. Serve warm with a squeeze of fresh lemon juice.
