Ingredients

  • 4 salmon fillets (6 oz each)
  • 1 cup unsalted roasted pistachios, finely chopped
  • 1/2 cup panko breadcrumbs
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp lemon juice (freshly squeezed)
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Line a baking sheet with parchment paper and lightly grease it.
  3. In a bowl, mix chopped pistachios, panko breadcrumbs, parsley, lemon juice, olive oil, salt, and pepper until well combined.
  4. Place salmon fillets skin-side down on the baking sheet and press the pistachio mixture onto each fillet.
  5. Bake for 15-20 minutes or until the salmon flakes easily with a fork.
