  • 1 cup all-purpose flour
  • 1/4 cup unsalted butter, cold and diced
  • 2 tbsp granulated sugar
  • 1 tbsp fresh thyme leaves
  • 2 cups pitted plums, sliced (about 4 plums)
  • 2 tbsp cold water
  • Egg wash (optional): 1 egg mixed with 1 tbsp water

Instructions

  1. In a mixing bowl, combine flour and sugar. Add cold butter and blend until crumbly.
  2. Slowly drizzle in cold water until dough forms. Wrap and chill for at least 30 minutes.
  3. Toss sliced plums with sugar and thyme; set aside to release juices.
  4. Roll out chilled dough on a floured surface to a circle about 1/4 inch thick. Transfer to parchment-lined baking sheet.
  5. Spoon plum mixture onto the center, leaving a 1-inch border. Fold edges over filling.
  6. Preheat oven to 375°F (190°C). Brush edges with egg wash if desired. Bake for 35–40 minutes until golden brown.
