- 2 cups pitted plums, sliced (about 4 plums)
- 2 tbsp cold water
- Egg wash (optional): 1 egg mixed with 1 tbsp water
Instructions
- In a mixing bowl, combine flour and sugar. Add cold butter and blend until crumbly.
- Slowly drizzle in cold water until dough forms. Wrap and chill for at least 30 minutes.
- Toss sliced plums with sugar and thyme; set aside to release juices.
- Roll out chilled dough on a floured surface to a circle about 1/4 inch thick. Transfer to parchment-lined baking sheet.
- Spoon plum mixture onto the center, leaving a 1-inch border. Fold edges over filling.
- Preheat oven to 375°F (190°C). Brush edges with egg wash if desired. Bake for 35–40 minutes until golden brown.
