  • 3 lbs chuck roast
  • 4 medium carrots, chopped
  • 2 lbs Yukon Gold potatoes, quartered
  • 1 large yellow onion, diced
  • 2 cups low-sodium beef broth
  • 4 cloves garlic, minced
  • 2 tsp dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Chop the carrots and potatoes into uniform pieces.
  2. Set the Instant Pot to sauté mode and heat olive oil. Sear the chuck roast on all sides (4-5 minutes each) until browned.
  3. Add onions and garlic; sauté until fragrant (about 2 minutes). Deglaze with a splash of beef broth.
  4. Return the roast to the pot. Add carrots, potatoes, thyme, bay leaves, and remaining broth.
  5. Close the lid securely. Pressure cook on high for 60 minutes.
  6. Allow natural pressure release for at least 15 minutes before manually releasing any remaining pressure.
  7. Remove the roast, let it rest for 10 minutes before slicing, and serve with veggies.
