  • 1 can (13.5 oz) unsweetened coconut milk
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the diced onion and minced garlic until fragrant and golden, about 5 minutes.
  2. Add the chopped potatoes to the pot and stir for 2 minutes to coat them in the flavors.
