Ingredients

Scale
  • 8 oz cream cheese, softened
  • 1 cup pumpkin puree
  • 1 cup powdered sugar
  • 1 cup graham cracker crumbs
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 8 oz chocolate chips (dark or milk)

Instructions

  1. Prepare your workspace by gathering all ingredients and tools (mixing bowls, spatula, parchment-lined baking sheet).
  2. In a large bowl, mix softened cream cheese, pumpkin puree, powdered sugar, cinnamon, and nutmeg using an electric mixer until smooth.
  3. Fold in graham cracker crumbs until fully combined.
  4. Cover the mixture and refrigerate for at least 30 minutes to firm up.
  5. Scoop tablespoon-sized portions and roll them into balls; place on the prepared baking sheet.
  6. Melt chocolate chips in short bursts in the microwave; dip each truffle in melted chocolate to coat evenly.
  7. Return truffles to the baking sheet and refrigerate until set (about 15 minutes). Optionally, add toppings before they harden.
