  • 9 oven-ready lasagna noodles
  • 1 cup canned pumpkin puree
  • 15 oz whole milk ricotta cheese
  • 1 ½ cups shredded mozzarella cheese (divided)
  • ¼ cup grated Parmesan cheese
  • 1 large egg
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 2 cups marinara sauce

Instructions

  1. 1. Preheat oven to 375°F (190°C). Cook the lasagna noodles according to package instructions until al dente. Drain and lay flat on parchment paper.
  2. 2. In a bowl, mix pumpkin puree, ricotta, egg, garlic powder, Italian seasoning, and half the mozzarella until well combined.
  3. 3. Spread about 1/4 cup filling on each noodle and roll up tightly. Place seam-side down in a baking dish.
  4. 4. Pour half the marinara sauce on the bottom of the dish. Top roll-ups with remaining sauce and sprinkle with mozzarella and Parmesan.
  5. 5. Cover with foil and bake for 25 minutes. Remove foil and bake an additional 15 minutes until golden brown.
