Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8 baking dish.
- In a large bowl, mix rolled oats, brown sugar, cinnamon, nutmeg, and salt until combined.
- In another bowl, whisk together pumpkin puree, milk, eggs, and vanilla extract until smooth.
- Pour the wet mixture into the dry ingredients and stir gently until evenly coated. If using nuts, fold them in now.
- Transfer the mixture to the prepared baking dish and bake for 30-35 minutes or until golden brown on top.
- Allow to cool slightly before slicing into squares. Serve warm with maple syrup or yogurt.
