  • 1 cup pumpkin puree
  • 1 cup almond milk (or any milk of choice)
  • 2 large eggs (or flax eggs for vegan)
  • 1/4 cup brown sugar (adjust to taste)
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional: 1/2 cup walnuts or pecans (toasted)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 baking dish.
  2. In a large bowl, mix rolled oats, brown sugar, cinnamon, nutmeg, and salt until combined.
  3. In another bowl, whisk together pumpkin puree, milk, eggs, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients and stir gently until evenly coated. If using nuts, fold them in now.
  5. Transfer the mixture to the prepared baking dish and bake for 30-35 minutes or until golden brown on top.
  6. Allow to cool slightly before slicing into squares. Serve warm with maple syrup or yogurt.
