Description

  • 1 cup canned pumpkin puree
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp ginger
  • 8 oz mascarpone cheese
  • 1 tsp vanilla extract
  • 2 large eggs (room temperature)
  • 2 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, cinnamon, nutmeg, and ginger.
  3. In another bowl, cream together sugar and butter until fluffy. Gradually add eggs and pumpkin puree.
  4. Fold in the dry ingredients until just combined.
  5. Drop dough onto baking sheets about 2 inches apart and bake for 12-15 minutes until edges are golden.
  6. For the frosting, whip mascarpone cheese with powdered sugar and vanilla until smooth.
  7. Frost cooled cookies and enjoy!
