Ingredients

  • 1 cup all-purpose flour
  • 1 cup pumpkin puree (canned or fresh)
  • 2 tbsp brown sugar
  • 2 large eggs
  • 1 tsp baking powder
  • 1 cup whole milk (or almond/oat milk)
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ cup chopped pecans (optional)

Instructions

  1. Preheat your waffle iron according to the manufacturer's instructions.
  2. In a large bowl, whisk together flour, baking powder, cinnamon, nutmeg, and brown sugar.
  3. In another bowl, beat eggs and add milk and pumpkin puree; whisk until smooth.
  4. Gradually fold the dry mixture into the wet mixture until just combined; a few lumps are fine.
  5. If using, fold in the pecans gently.
  6. Lightly grease the waffle iron if necessary and pour about ½ cup of batter onto it.
  7. Close the iron and cook for 4–5 minutes or until golden brown.
  8. Serve warm with maple syrup or whipped cream.
