Description

Ingredients

  • 2 cups fresh raspberries
  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • ½ cup unsalted butter (cold)
  • 1 tsp baking powder
  • ¼ tsp salt
  • Zest of 1 lemon
  • ½ cup oats (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  2. In a large bowl, mix flour, granulated sugar, brown sugar, and salt. Cut in cold butter until crumbly.
  3. Stir in oats, if using.
  4. In another bowl, combine raspberries with lemon zest and a tablespoon of sugar; toss gently.
  5. Press half the crumble mixture into the prepared pan. Spread raspberry filling on top, then sprinkle remaining crumble over it.
  6. Bake for 30-35 minutes or until golden brown.
