Instructions
- Preheat oven to 350°F (175°C) and grease an 8×8-inch baking pan.
- In a large bowl, mix flour, granulated sugar, brown sugar, and salt. Cut in cold butter until crumbly.
- Stir in oats, if using.
- In another bowl, combine raspberries with lemon zest and a tablespoon of sugar; toss gently.
- Press half the crumble mixture into the prepared pan. Spread raspberry filling on top, then sprinkle remaining crumble over it.
- Bake for 30-35 minutes or until golden brown.
